Spareribs marinade from Marion

Ingredients for 1 servings:

  • 2 large onions
  • 4 tbsp olive oil
  • 6 tbsp tomato paste
  • 2 tsp sweet paprika powder
  • 2 tbsp mustard, medium hot or hotter
  • 4 tbsp honey
  • 6 tbsp white wine vinegar or light balsamic vinegar
  • ¼ liter meat broth, maybe a little more
  • 1 tbsp rosemary, dried or fresh
  • Salt and pepper, black, freshly ground

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Ideal marinade also for chops or beef steaks, lamb or chicken legs

Finely dice the onions and fry in oil. Add tomato paste and paprika and fry briefly. Remove the pan from the heat and add the mustard, honey, vinegar, stock, rosemary, salt, and pepper. Return to the heat and whisk well. Bring to a boil once, then simmer over very low heat until thickened. Season to taste, and the marinade is ready. This makes enough for about 2 kg of spare ribs. They’re best when marinated for at least 8 hours!
