Pink Grapefruit Ice Cream

Ingredients for 4 servings:

  • 90 g sugar
  • 60 ml water
  • 200 ml grapefruit juice (pink grapefruit juice)
  • 1 pink grapefruit(s)
  • 3 cl liqueur (Underberg)
  • Rosemary sprig(s) for decoration

Instructions

Working time approx. 20 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 5 minutes; Total time approx. 3 hours 25 minutes

First, bring the sugar and water to a boil and simmer for about 5 minutes. Then, combine the juice and the Underberg with the lukewarm syrup. Pour the mixture into a shallow bowl and freeze for two hours. Stir the mixture with a fork and repeat this every 30 minutes until a fine, crystal-like mass forms. Then, peel the grapefruit, segment it, and cut it into bite-sized pieces. Pour the ice cream and grapefruit pieces into dessert glasses and garnish with rosemary, if desired.
