Fruit bread – super easy

Ingredients for 1 servings:

  • 4 eggs
  • 1 tbsp rum flavoring
  • 150 g honey
  • 200 g whole wheat flour
  • 2 tsp, leveled baking powder
  • 2 tsp cinnamon
  • 150 g dried dates, pitted
  • 150 g fig(s), dried
  • 125 g candied lemon peel
  • 150 g hazelnuts, chopped
  • 150 g raisins

Instructions

Working time approx. 30 minutes; Rest period approx. 3 days; Cooking/baking time approx. 1 hour; Total time approx. 3 days 1 hour 30 minutes

suitable for wholemeal flour

Whisk the eggs until frothy and add the rum flavoring and honey. Combine the whole wheat flour with the baking powder and cinnamon and stir into the egg mixture. Don’t chop the dates and figs too finely. Chop the candied lemon peel very finely! Stir the chopped hazelnuts, dates, figs, raisins, and candied lemon peel into the batter. Stir well to ensure all the ingredients are well blended. Line a loaf pan with baking paper and pour in the batter. Bake in a preheated oven at 160°C (top/bottom heat) for about 1 hour. Remove the baked fruit bread from the pan, let it cool, and wrap it in aluminum foil for two to three days. It is then ready to eat.
