Ingredients for 4 servings:

  • Weigh 60 g of eggs without shell
  • 60 g butter
  • 60 g sugar, fine
  • 60 g flour, all-purpose
  • Peach(s) , from the can
  • 1 shot of cream
  • 1 tbsp jam, apricot

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Preheat oven to 160°C. Grease a small 15 cm baking pan and, if possible, place a piece of baking paper on the bottom. All ingredients should be at room temperature. Combine the egg, butter, sugar, flour, and cream and mix on high for 1 or 2 minutes. Cut the peaches into thin slices. Pour the batter into the baking pan and smooth it out. Arrange the peach slices on top. Place the mixture in the oven and bake for 30 minutes until golden brown. Remove from oven, bring the apricot jam to a boil with a little water, sieve if there are any pieces and brush on, then let cool. The recipe can easily be doubled.
