Baked salmon

Ingredients for 2 servings:

  • 500 g potato(s), waxy
  • ½ bunch of dill
  • 150 g crème fraîche
  • 1 tbsp coarse mustard
  • some salt and pepper
  • 1 tbsp butter
  • 2 salmon fillets (160 g each)

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 55 minutes

Boil the potatoes in salted water, cover, and cook over medium heat for about 20 minutes. Meanwhile, finely chop the dill and mix with the crème fraîche and mustard. Season with salt and pepper. Drain the potatoes and rinse them with cold water. Let the potatoes cool briefly, peel them, and cut them into 1/2 cm thick slices. Grease two casserole dishes (18 cm diameter) with 1 tsp butter each. Layer the potato slices in the dishes and scatter them on top with 1/2 tbsp butter in flakes. Pat the salmon fillets dry with kitchen paper and season all over with salt and pepper. Place one salmon fillet on each of the potato slices and spread with the dill cream. Bake the salmon in a hot oven at 200°C in the center of the oven for 20 minutes (fan oven not recommended).
