simple, made from yeast dough for the coffee table
Make a soft yeast dough from the 400g flour, the dried yeast, the sugar, the vanilla sugar, the egg, the butter, and the milk (knead thoroughly until the dough is nice and elastic). Let it rise in a warm place until it has increased in size (approx. 30 minutes). Using your hands or the dough hook of a mixer, make a crumble from the 200g flour, the sugar, the butter, and, if desired, the cinnamon. Keep cool, but not too cold, until ready to use. Lightly flour the yeast dough and roll out thinly. Cut out circles (approx. 10-15 cm in diameter) and place them on two baking sheets lined with baking paper. Brush the dough pieces thinly with milk. Place about 1 teaspoon (or a little more) of plum jam or another jam or poppy seed paste (the sky’s the limit) in the center of each dough piece. Sprinkle the crumble generously over the dough pieces. Let everything rise again until the dough pieces have visibly increased in size. Then bake. Baking time: 15 minutes. Top/bottom heat, preheated to 200°C. Fan oven, preheated to 180°C. Gas mark 3-4. Cool on wire racks. The specified amount is enough for about 12 crumbles!
