Banana Nut Muffins

Ingredients for 1 servings:

  • 100 g flour
  • 50 g flour (whole grain)
  • 50 g almonds or nuts, ground
  • 2 tsp baking powder
  • 2 m.-sized banana(s)
  • 180 g low-fat curd cheese
  • 170 g sugar (see note)
  • 70 ml oil
  • 50 ml milk
  • 2 eggs
  • 1 packet of vanilla sugar
  • some lemon juice
  • possibly chocolate bars (Mars bars or chocolate chips)

Working time approx. 15 minutes; Total time approx. 15 minutes

Line a muffin tin with paper baking cups and preheat oven to 200°C. Combine all ingredients for Mix 1 in a bowl, mix, and set aside. Peel the bananas, break them into pieces, place them in another bowl, and drizzle with a little lemon juice. Add the sugar, vanilla sugar, and quark and puree using a hand blender or in a mixer. Add the remaining ingredients from Mix 2 and mix well. Now pour Mix 1 onto Mix 2 and stir and fold in until everything is just combined. Pour the batter into the muffin tin and bake in the oven for approx. 30-35 minutes. Tip: Add a tablespoon of batter to each muffin tin, then press a piece of Mars Bar or a small piece of chocolate into the batter and cover with the remaining batter. Note: Be careful, you may need to reduce the amount of sugar depending on the ripeness of the bananas!
