Ingredients for 4 servings:

  • 200 g mixed grains, e.g. 6-grain mix
  • 1 apple
  • 1 banana(s)
  • 150 g natural yogurt, 1.5% fat
  • 4 tbsp cream, as desired
  • 1 tbsp honey, to taste
  • 2 tbsp hazelnuts, chopped
  • 2 tbsp walnuts
  • e.g. lemon juice
  • n. B. Fruits, fresh
  • n. B. dried fruits

Working time approx. 30 minutes; Rest time approx. 10 hours; Total time approx. 10 hours 30 minutes

to prepare the evening before

The night before, coarsely grind the grain mixture (wheat, rye, oats, and barley are all suitable) in a grain mill. For a Jupiter grinder, I recommend setting 3 (turning back and forth a bit at a time will result in very fine and slightly coarser pieces). If you don’t have a grinder, you can also use an old coffee grinder. After grinding, soak the grain in cold tap water. Adjust the amount of water so that the grain is completely covered and there is still about 1 cm of liquid above the grain. Let it stand overnight at room temperature. If you like, you can also soak dried fruit in a separate container. The liquid will usually be absorbed by the next morning. If not, drain the rest. After making it a few times, you’ll have the experience to know how much water is needed. Coarsely grate the apple, mash the banana with a fork, and stir both into the cereal. These two types of fruit are essential unless you have an allergy, as they give the cereal the right freshness and sweetness. Stir in yogurt, cream (makes the mixture a little smoother), honey (for sweetening), and nuts, and then refine as desired: – Chop fresh fruit and fold in, e.g., strawberries, raspberries, blueberries, seedless grapes, tangerines, cherries, etc. Any fruit with an intense, slightly tart flavor is suitable. We prefer grapes and strawberries. – I always add chopped hazelnuts and walnuts. Crushed Brazil nuts, almonds, or pumpkin/pine nuts would certainly also be possible. – Add dried fruit (possibly chopped). Raisins, prunes, cherries, or cranberries are definitely suitable. The muesli should be used the day it is made. It will keep for another morning, but the consistency will then become rather slimy, and important nutrients will be lost. It’s best to make it fresh again.
