Beef sausage with Maria's curry sauce

Ingredients for 4 servings:

  • 1 large onion(s)
  • 1 tbsp sunflower oil or rapeseed oil
  • 3 tsp curry powder
  • 1 tsp paprika powder, medium hot
  • 70 g tomato paste
  • 2 tbsp ketchup
  • 2 tsp sugar
  • 1 tbsp vinegar
  • 1 piece(s) ginger root, approx. walnut-sized
  • 75 ml water
  • 2 bratwursts (beef sausages)
  • Sunflower oil or rapeseed oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Peel the onion and chop it in a food processor or finely with a knife. Heat the oil in a pan and briefly fry the finely chopped onions with paprika and curry powder. When the onions are ready, add the tomato paste, water, sugar, peeled and diced ginger, and vinegar, and simmer covered over low heat for about 15 minutes. Finally, add the ketchup. Stir everything well and adjust the seasoning to taste, or add a little water if the sauce seems too thick. Transfer the sauce to a warming container. Add a little more oil to the pan, heat it up, and fry the sausages for about 4 minutes, turning occasionally to ensure they are well browned. Now it’s ready to serve. Bread, rolls, or even rice or noodles go well with it.
