Fried potatoes alla Jenny

Ingredients for 3 servings:

  • 10 m.-sized potatoes, waxy
  • 250 g sausage (poultry sausage)
  • 4 slices of salami
  • 2 onions
  • 6 eggs
  • salt and pepper
  • Oil for the pan
  • possibly remoulade

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Boil the potatoes (with the skin on and not too soft). In the meantime, dice the chicken sausage and salami. Slice the onions. Peel the potatoes, slice them, and divide them between two pans (so they’re all nice and crispy). Fry the potatoes in oil for about 20 minutes until crispy. Then add the chicken sausage and fry for about 5 minutes, followed by the salami and onions (for another 5 minutes). Divide the ingredients between the pans, adding more oil as needed. Don’t forget to season them halfway through! Finally, crack 3 eggs into each pan and let them set. The whole thing can be refined with remoulade at the table.
