Ingredients for 4 servings:

  • 500 g potatoes, floury
  • ½ lemon(s), untreated, zest
  • 30 g pine nuts, halved, roasted
  • 1 egg(s)
  • 1 egg yolk
  • 50 ml cream
  • Butter for the molds
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Supplement

Boil the potatoes until soft, then strain through a sieve or mash. Mix with the cream, pine nuts, and lemon zest, and season with salt, pepper, and freshly grated nutmeg. Finally, when the mixture has almost cooled, mix in the eggs. Pour into small buttered ramekins, place them in a baking dish of the same height, pour hot water almost to the rim, and bake in this water bath at medium heat (about 180°C) in the oven for about 35 minutes until firm. Remove from the oven, wait a few minutes, turn out, and serve as a side dish.
