Banana ice cream with strawberries

Ingredients for 6 servings:

  • 250 ml cream, + 3 tbsp
  • 250 ml milk
  • 4 egg yolks
  • 80 g sugar
  • 4 banana(s), ripe
  • 1 tbsp lemon juice
  • 500 g strawberries, ripe
  • 40 g sugar, for the strawberries

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Bring 3 tablespoons of cream and milk to a boil in a saucepan. Meanwhile, vigorously beat the egg yolks with the sugar. Pour the milk into the eggs, return everything to the pan, and beat the cream until smooth, just before it boils. Allow the cream to cool, stirring regularly. Blend the bananas with the lemon juice in a blender or press through a sieve. Mix the banana puree with the cream, then whip 250 ml of cream until stiff peaks form and fold in. Freeze the ice cream mixture in a lidded container. Stir the ice cream once or twice before it hardens completely. Reserve six good-looking strawberries, mash the others with a fork, and add sugar to taste. Serve the ice cream in layers with the strawberry mixture in tall glasses and decorate with halved strawberries.
