Nutella eggnog muffins

Ingredients for 1 servings:

  • 120 g butter, soft
  • 2 eggs
  • 150 g flour
  • 100 g sugar
  • 1 packet of vanilla sugar
  • 1 ½ tsp, leveled baking powder
  • 1 tbsp, heaped Nutella
  • 15 g dark chocolate
  • 1 tbsp cocoa powder
  • 2 tbsp milk
  • 4 tbsp eggnog

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Beat the eggs well with the softened butter. Combine the flour, sugar, vanilla sugar, and baking powder, add to the butter and egg mixture, and mix. Divide this batter into two roughly equal parts. Then, using a knife, chop the dark chocolate into small to slightly larger pieces and add it to one part of the batter along with the Nutella, milk, and cocoa powder; mix well. Add the eggnog to the other part of the batter. Now first fill the muffin tins with the light batter, then pour the dark batter over it, filling the tins about two-thirds full. Bake in a preheated oven at 180°C (convection oven) for about 15-18 minutes. It’s best to take the muffins out early, otherwise they’ll become too dry.
