Ingredients for 4 servings:
- 1 large cucumber(s)
- ½ cup sugar
- ½ cup vinegar
- 2 tbsp salt
- 2 tsp herbs, frozen
- ½ cup water
Instructions
Working time approx. 5 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 5 minutes
First: Use a coffee cup (approx. 200-250 ml) as a measure. Thinly slice the cucumber, place them in a sieve, and sprinkle with salt. Let stand, covered, for about an hour to allow the liquid to release from the cucumber. Dissolve the sugar in the vinegar (approx. 10 minutes). Then season to taste with the water and frozen herbs. Pour the vinegar solution into a bowl with the cucumber slices and refrigerate for about an hour. Letting the salad stand will give it a nice crispy texture.
