Parsley root gratin

Ingredients for 3 servings:

  • 500 g parsley root(s)
  • 500 g potatoes
  • 1 large onion(s)
  • 1 tbsp oil
  • 300 ml cream
  • 300 ml milk
  • 100 g cheese (Gouda)
  • 300 g cooked ham
  • 1 garlic clove(s)
  • salt and pepper
  • nutmeg
  • 2 eggs

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

Preheat the oven to 200 degrees Celsius (180°C fan/convection oven). Peel and rinse the parsley roots and potatoes, then cut into thin slices. Finely dice the onions and sauté in hot oil. Add the parsley roots, potatoes, crushed garlic, cream and milk and cook everything in an uncovered pan over medium heat for 10 minutes, stirring occasionally. Meanwhile, grate the cheese. Dice the cooked ham and mix with the vegetables. Season everything with salt, pepper and nutmeg. Grease an ovenproof dish. Remove the pot from the heat. Scoop the vegetables out of the pot and spread them in the baking dish. Whisk the remaining liquid with 2 eggs and then pour over the vegetables in the baking dish. Sprinkle with the grated cheese. Bake in the oven for about 60 minutes. Serve with a green salad.
