Penne salad with mustard meatballs

Ingredients for 4 servings:

  • 500 g minced beef
  • 3 slices of toast
  • 1 m.-sized onion(s)
  • 2 tsp mustard, medium hot
  • 1 egg(s)
  • Paprika powder, sweet
  • salt and pepper
  • 2 tbsp oil
  • 250g penne
  • 1 bunch of spring onions
  • 100 g cheese (Gouda), in one piece
  • 200 g tomatoes
  • 400 g salad (meat salad), preferably homemade
  • 3 tbsp vinegar

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Cook the pasta in salted water according to the package instructions, drain, rinse, and let it drain. Trim and wash the spring onions and slice into rings. Finely dice the cheese. Wash the tomatoes and slice into wedges. Mix the pasta, meat salad, and vinegar. Fold in the spring onions, tomatoes, and cheese. Season the salad to taste. Soak the toast in cold water. Peel and finely dice the onion. Knead the ground beef with the squeezed-out toast, onion, mustard, egg, salt, pepper, and paprika and form into 8 meatballs. Heat the oil in a large pan and fry the meatballs for 6-8 minutes on each side. Serve the meatballs with the salad.
