Zucchini pizza with garlic shrimp

Ingredients for 2 servings:

  • 250 g shrimp(s)
  • ½ onion(s)
  • 1 ½ m.-large zucchini
  • 1 egg(s)
  • salt and pepper
  • olive oil
  • Tomato paste
  • 15 g flour
  • 1 garlic clove(s)
  • 4 tbsp cream cheese
  • 2 handfuls of sunflower seeds

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour

Thaw the shrimp if necessary. Peel and finely dice the onions. Wash and grate the zucchini, squeeze it dry in a clean tea towel, and place it in a bowl. Add half of the diced onions, the egg, and the flour, and mix well with salt and pepper. Line a baking sheet with baking paper, halve the mixture, and press it into a round shape. Bake in a preheated oven (top/bottom heat: 200°C, fan oven: 180°C, gas: see manufacturer’s instructions) for about 25 minutes – do not cook completely. Wash the shrimp, pat dry (cut into bite-sized pieces if necessary), and sauté in a pan with oil along with the remaining onions and garlic (finely chopped or crushed). Add the tomato paste and finish frying. When the zucchini bases are lightly browned, remove them and spread half of the cream cheese on each pizza. Top with the garlic and tomato mixture, shrimp, and sunflower seeds. Then bake the pizzas in the oven for about 10 minutes before serving.
