Ingredients for 4 servings:

  • 600 g pork fillet(s)
  • 4 large onions
  • 4 cloves garlic, preferably fresh
  • Clarified butter
  • 3 can/n tomatoes, chopped
  • 300 g cheese, coarsely grated
  • salt and pepper
  • Herbs, Italian, dried

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the pork fillet into approximately 3 cm thick slices and pound flat. Dice the onion fairly well and press the garlic through. Briefly fry the pork fillet slices in a little clarified butter until lightly browned. Remove the slices from the fat and place them in a casserole dish. Brown the onions and garlic in the remaining fat, add the tomatoes and let it simmer slightly. Add half of the cheese to the sauce and let it melt. Stir in herbs as desired, season with salt and pepper, and pour over the fillet slices. Sprinkle with the remaining cheese and bake at 200°C for about 30 minutes. Serve with warm baguette or warm bread rolls. We did it with pasta, though.
