Ingredients for 4 servings:
- 1 onion(s)
- 5 sprigs of oregano
- 5 sprigs basil
- 1 tbsp olive oil
- 2 tbsp tomato paste
- 500 g tomatoes, pureed
- salt and pepper
- 250g spaghetti
- 4 pork loin steaks
- 4 slices of raw ham
- 8 sage leaves
- 1 tbsp vegetable oil
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes
Peel the onion and dice very finely. Pick the leaves from the oregano and basil and chop them finely. Heat the olive oil in a small saucepan and sauté the onion and tomato paste for two minutes. Add the passata, bring to a boil, and simmer for about five minutes. Then add the oregano and simmer for another two minutes. Season with pepper and salt, and stir in the basil. Cook the spaghetti in plenty of salted water according to the package instructions. Pat the minute steaks dry, season with pepper and a very little salt, and place a slice of ham and two sage leaves on each steak, securing them with a toothpick. Then gently fry the steaks in a pan in 1 tablespoon of vegetable oil over medium heat to keep them moist and prevent the sage from burning. Serve the spaghetti on plates with the tomato sauce and the steaks and serve immediately while hot.
