Mini gingerbread without flour

Ingredients for 1 servings:

  • 200 g sugar
  • 3 eggs
  • 50 g candied lemon peel
  • 50 g candied orange peel
  • 1 pinch of salt
  • 200 g hazelnuts, ground
  • 150 g almonds, ground without skin
  • 100 g walnuts, ground
  • 2 tsp gingerbread spice
  • 1 tsp cinnamon
  • n. B. Wafers 5 cm diameter, approx. 70 pieces
  • e.g. chocolate glaze or lemon glaze

Working time approx. 45 minutes; Cooking/baking time approx. 17 minutes; Total time approx. 1 hour 2 minutes

Whisk the sugar and eggs until frothy. Finely grind the candied lemon and orange peel or chop them finely in a blender, add them to the egg mixture along with the nuts and spices, and mix well. Spread this batter onto the wafers in a dome shape using a knife dipped in water. Bake in a preheated oven at 160°C (top/bottom heat) for about 15 minutes. Cover with chocolate or lemon glaze, or enjoy plain without glaze.
