Mastbrucher minced meat toast

Ingredients for 2 servings:

  • 1 stalk(s) leek
  • 1 bunch of chives
  • 1 large onion(s)
  • 2 eggs
  • 2 tbsp lard for frying
  • 100 g bacon or chopped ham
  • 100 g minced meat
  • 1 pinch(s) nutmeg
  • 1 pinch of salt
  • 1 pinch(s) of pepper
  • 4 slices of toast
  • e.g. Parmesan, grated

Working time approx. 20 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes

Wash the leek and cut into thin slices, wash the chives and cut into rolls, peel the onion and chop into small pieces. Crack the eggs into a cup and stir in the chives. Heat the lard in a pan and sauté the onions until translucent. Add the bacon, stirring constantly, and let it brown. Add the minced meat and leek and fry. Reduce the heat and add the eggs and chives, stirring constantly. Add a pinch of nutmeg and season with salt and pepper. Spread the mixture on the toast and sprinkle with grated Parmesan cheese. Place the toast on a rack lined with baking paper, bake at 200°C for about 20 minutes, and serve warm. A pilsner is best served with it.
