Zucchini cordon bleu casserole

Ingredients for 4 servings:

  • 1 m.-large zucchini
  • 2 tbsp flour
  • 2 eggs
  • 4 tbsp, heaped breadcrumbs
  • Salt
  • pepper
  • Butter or oil
  • 200 g cooked ham
  • 300 g cheese, grated, such as Emmental or Gouda
  • 2 tbsp Parmesan
  • 2 garlic cloves

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 10 minutes

Put the flour, beaten eggs, and breadcrumbs into separate plates. Cut the zucchini (ideally at least 10 cm in diameter) into slices about 0.5 cm thick. Season the slices with salt and pepper, coat one side only with flour, egg, and breadcrumbs, and fry in a pan with butter. Place half of the zucchini slices, breaded side down, in a baking dish greased with oil or butter and sprinkled with garlic. Spread the cooked ham on top and sprinkle two-thirds of the cheese over the zucchini. Arrange the other half of the zucchini slices, breaded side up, on top and sprinkle with the remaining cheese. Place the casserole in the oven at approximately 170 degrees Celsius (350 degrees Fahrenheit) and bake for 30 minutes. Serve with a salad or vegetables.
