Stracciatella cake

Ingredients for 1 servings:

  • Fat and flour for the mold
  • 2 eggs
  • 160 g sugar
  • 2 packets of vanilla sugar
  • 100 g oil
  • 150 g cream
  • 1 pinch of salt
  • 250 g flour
  • ½ pack of baking powder
  • 100 g chocolate sprinkles
  • 100 g chocolate or couverture
  • 35 g butter or coconut milk

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 1 hour; Total time approx. 3 hours 30 minutes

Preheat the oven to 160°C (fan). Grease a loaf pan well and dust with flour. In a bowl, beat the eggs, sugar, and vanilla sugar until creamy. Then add the oil and cream alternately. Add the pinch of salt and sift the flour with the baking powder and stir in. Briefly fold in the chocolate sprinkles and pour the batter into the prepared loaf pan. Bake the cake in the hot oven on the middle rack for approx. 50-60 minutes. Do the skewer test. Allow the cake to cool completely in the pan before removing it from the pan. Once the cake has cooled, chop the chocolate into small pieces and melt it with the butter in a double boiler (alternatively in the microwave), heating it gently. Pour the glaze over the cake and allow to set.
