Here’s a great recipe for using up leftovers: Take a few gratin dishes and cover the bottom with about 1cm of tomato puree or diced tomatoes. Then chop the vegetables into small pieces, preferably small cubes, and cook the rice until tender. Mix the rice and vegetables together and season to taste. Place the hollowed-out pepper halves, cut in half lengthwise, on the bed of tomatoes and fill them with the mixture of cooked rice and diced vegetables. Feel free to spoon in the filling and press it in, then pile it up nicely on top. Then add a few slices of cheese on top. You can also season the top layer of cheese with paprika. Bake the stuffed peppers in the oven until the cheese has melted and the peppers are soft.
