Pull the lettuce onto a soup plate. Dice the bell peppers and tomatoes and add them. Grate the cucumber and peeled radish over the salad. Slice the spring onion into rings, dice the mozzarella and the beef, and add it with the corn. Garnish with some arugula. We’ve been having this salad every evening for some time now, with different dressings (depending on time, I make the dressing myself – usually with Cremefine – or use a ready-made mix; sometimes we even use ready-made dressings). It’s so filling that my mother and I usually don’t eat bread with it. The advantage: It’s so versatile. The recipe is based on my parents’ portion. My plate omits the bell peppers, and I always deseed the tomatoes. We always leave out the meat, fish, and cheese for my brother, and he doesn’t use salad dressing. Tips: Depending on what’s in the fridge, you can add or omit any ingredients you like, e.g., eggs or mushrooms. Instead of meat, you can also use fried Arctic prawns and/or smoked fish of your choice.
