Peach Melba Cake

Ingredients for 1 servings:

  • 3 eggs
  • 90 g sugar
  • 1 pkt. pudding powder, chocolate
  • Flour
  • 1 can peach(s), in wedges or 2 cans mandarin oranges
  • 400 g sweet cream
  • 1 tbsp vanilla sugar
  • 1 point cream stiffener
  • 240 ml juice (multivitamin juice)
  • 2 pkt. Vanilla sauce powder, no cooking

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Separate the eggs, beat the egg whites until stiff, and then drizzle in the sugar. Whisk the egg yolks and fold in. Add the chocolate pudding packet to 100g of flour, sift, and fold in. Bake at 160°C (fan oven) for 15-20 minutes. Form a cake ring around the cooled base. Whip the cream with vanilla sugar and cream stiffener until firm. Spread a thin layer over the base. Then arrange the drained mandarins/peaches on top. Then pour the remaining cream over the mandarins/peaches to create an even surface. Mix the sauce powder with the multivitamin juice well and pour over the cream. Chill for 1-2 hours before serving.
