Baked pork fillet with figs and ham

Ingredients for 3 servings:

  • 600 g pork fillet(s)
  • 5 figs, fresh
  • 3 large slices of cooked ham
  • 200 g sweet cream
  • 2 tbsp tomato paste
  • 2 spring onions, cut into rings
  • 100 g medium-aged Gouda, grated
  • some salt
  • Herbs of your choice

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes

Remove any fat and tendons from the pork fillet, cut into slices, and sear briefly in a little hot oil. Halve the figs. Arrange the fillet pieces and figs in a checkerboard pattern in a shallow baking dish lightly brushed with oil. Heat the cream in the pan used to sear the meat, add the tomato paste and spring onions, and simmer briefly. Season with salt and herbs, if desired. Spread the sauce over the figs and meat in the baking dish. Cover everything with the ham slices and sprinkle with the cheese. Bake in the oven at 180°C with fan or 200°C with top/bottom heat for about 1/2 hour, until the cheese is browned. We like it best with fresh ciabatta, but rice and/or lamb’s lettuce or arugula salad also work well.
