Ingredients for 1 servings:
- 100 g butter
- 100 g sugar
- 2 tbsp flour
- 1 packet of baking powder
- 100 g nuts, ground
- 2 tbsp cocoa powder
- 3 eggs, separated
- 500 ml cream
- 1 small jar of cranberries
Instructions
Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes
Cranberry and nut cake
Mix the baking powder, cocoa, and flour. Beat the egg whites with a pinch of salt until stiff peaks form. Cream the butter and sugar until fluffy, then fold in the egg yolks. Fold in the nuts and the flour mixture. Finally, fold in the beaten egg whites. This will make a very firm batter! Pour the mixture into a greased springform pan and bake for about 20 minutes at 180 degrees Celsius. Whip the cream until stiff peaks form and mix with the cranberries. Spread over the cooled cake and refrigerate for one hour. Very delicious and fruity!
