Ingredients for 4 servings:

  • 500 g hunting sausage or beer ham
  • 4 m.-sized onion(s)
  • 3 m.-large mustard gherkins or pickles
  • 1 tbsp mustard
  • 2 tbsp horseradish
  • 1 tsp, heaped mustard seeds
  • 3 tbsp oil
  • 1 tsp vinegar
  • n. B. salt and pepper, some coarse ground
  • n. B. sugar
  • radish
  • Egg(s), boiled, or tomato
  • Parsley

Cut the skinless sausage into thin strips, the onions into thin slices, and the halved cucumbers into thin slices. Mix everything well in a bowl. Season with a little salt, grated horseradish, mustard, pepper, oil, sugar, a little vinegar, and 1 teaspoon of mustard seeds, and let the salad marinate well. Serve in small bowls, garnished with radishes, a boiled egg, and parsley. Serve with buttered sandwiches or bread rolls.
