Glazed butterfly schnitzels

Ingredients for 4 servings:

  • 4 pork schnitzels, butterfly
  • 120 g jam, orange
  • Oil (sunflower oil)
  • Sea salt, from the mill
  • Black pepper, freshly ground
  • 2 handfuls of sage, fresh

Instructions

Working time approx. 8 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 16 minutes

Schnitzel with jam sauce

For me, one of the easiest recipes there is and simply DELICIOUS! Take the butterfly pork schnitzel out of the fridge 30 minutes before cooking. Place the schnitzel in a bowl and brush with oil. Season with salt and pepper. Heat a heavy pan and add the schnitzel to the pan along with the sage. Fry for 2 minutes on each side. Then spread the orange marmalade on the schnitzel (I don’t like orange marmalade at all, but this is really great!) and turn the schnitzel over immediately. You can immediately feel the caramelization starting. Then I turn the schnitzel over again and leave it in the pan (at reduced heat) until it is nicely glazed. Serve immediately. Side dish: any vegetables (I made a carrot-based version) and croquettes. Done and absolutely delicious!
