Ingredients for 1 servings:
- 2 kg zucchini, sliced
- ½ kg onion(s), cut into rings
- ½ kg bell pepper(s), chopped
- 1 liter of water
- 0.7 liters of vinegar (wine vinegar)
- ½ liter apple juice
- 1 tbsp salt
- 170 g sugar
- 10 peppercorns
- 1 tbsp mustard seeds
- 1 tbsp curry powder
- possibly dill
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Boil a broth from water, vinegar, apple juice, and the spices (except the dill). Add the zucchini slices, bell pepper pieces, and onion rings and let it simmer briefly. Pour the mixture into twist-off jars (add dill at this point if desired) and seal immediately. Let it steep for at least 7 days before serving.
