Ingredients for 1 servings:

  • 3 pork medallions
  • 2 slices of bacon
  • 4 large tomatoes
  • 1 ball of mozzarella

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Simple and fast

Wash the tomatoes and pork medallions. Cut the tomatoes into small cubes. Cut the bacon into small strips and set aside. Season the pork medallions with salt and pepper. Preheat the oven (convection oven) to 170 degrees Celsius. Heat a pan and sear the medallions for about 3 minutes on each side. Set the medallions to one side and add the bacon to the pan and sear. Once it is slightly crispy, add the tomatoes to the pan and sear for about 1 minute. Add the meat juices to the pan and stir in. Place the medallions in a lightly greased baking dish and add the bacon and tomatoes. Let the meat rest briefly. In the meantime, slice the mozzarella and place on top of the meat slices. Place the baking dish in the oven for about 25 minutes and the dish is ready. Serve with tagliatelle or croquettes. Tip: If you like a lot of sauce, you need to use more tomatoes (all of them, including the seeds).
