Ingredients for 4 servings:

  • 12 fish fillets (herring)
  • 1 large onion(s) (vegetable onion)
  • 2 m.-sized apples, slightly floury
  • 5 gherkins
  • 2 tbsp capers
  • 1 bay leaf
  • salt and pepper
  • 400 ml cream
  • 400 ml buttermilk

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Clean the herring fillets and place them in a large, lidded bowl. Thinly slice the onion and add it. Peel, core, and finely slice the apples and add them. Cut the cucumbers into small pieces or thinly slice them and add them with the bay leaf and capers. Pour in the cream and buttermilk. Season with salt and pepper. The longer the herring fillets simmer in the sauce, the better they taste. If necessary, prepare the herring the day before and cover with foil and a lid. The herring will keep for up to 5 days. They go perfectly with boiled potatoes or fresh baguette.
