Ingredients for 4 servings:
- 150 g glass noodles
- Water, warm
- 2 stalk(s) celery
- 200 g spinach
- 1 piece(s) ginger (2 cm)
- 1 chili pepper(s), dried
- 1 tbsp beans, black, fermented
- 300 g lean minced meat
- 2 tbsp soy sauce
- ⅛ liter chicken broth
- 1 tbsp sesame oil
- possibly garlic
Instructions

Cover the glass noodles with warm water and let them soak for 10 minutes. Wash, trim, and dice the celery. Sort the spinach and wash it thoroughly. Peel the ginger and finely chop it with the chili pepper and black beans. Heat the oil and sauté the ginger mixture over medium heat. Stir-fry the meat and celery until the meat is crumbly. Add the spinach and let it wilt. Season with soy sauce and pour in the stock. Drain the glass noodles and chop them slightly. Mix in the water and cook everything for about another 2 minutes. Season to taste, drizzle with sesame oil, and serve. Tip: Seaweed leaves are a hit. You can omit the beans. Add some freshly crushed garlic to the ginger mixture.
