Potato, vegetable, and apple meatball pan for 2 people

Ingredients for 2 servings:

  • 4 m.-sized potatoes
  • 1 pack of soup vegetables, including:
  • 2 small carrots
  • 1 piece(s) celery
  • ½ stalk(s) leek
  • 1 piece(s) cauliflower
  • 1 stalk(s) spring onion(s)
  • 1 m.-large bell pepper(s), green
  • 1 m.-sized onion(s)
  • 1 m.-sized apple, (sour)
  • 2 large meatballs (homemade or ready-made)
  • Fat, for the pan
  • Salt
  • pepper
  • chili
  • Spice mix (Asian spice)

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Peel/clean the potatoes, carrots, celery, leeks, cauliflower, spring onions, bell peppers and onions and cut them into thin slices. Heat the fat in a pan, add everything that has been chopped up and simmer on a low heat setting with the lid closed for about 20 minutes, stirring gently now and then. After 10 minutes, season to taste, add the sliced ​​apple and fold in. Place the finished meatballs on top (you can also cut them into small pieces beforehand), put the lid back on and let simmer for another 10 minutes. Season to taste and you’re done.
