Spread the love

Ingredients for 1 servings:

  • 2 apples
  • 4 banana(s), ripe
  • 4 tbsp margarine
  • 2 packets of vanilla sugar
  • 100 g flour
  • 40 g oat flakes
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 pinch of salt

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

simple and versatile, vegan, makes about 12 muffins

First, preheat the oven to 210°C (top/bottom heat). Then, wash, peel, and finely dice the apples. Melt the margarine in a saucepan or in the microwave and mix it with the flour, vanilla sugar, baking powder, baking soda, cinnamon, oats, and salt in a bowl. Peel the bananas, mash them as finely as possible, and add them to the batter. Finally, fold in the diced apples. Place 12 paper baking cups in the holes of a muffin tin and distribute the batter evenly. Bake the muffins on the middle rack for about 25 minutes. Once they’re done, let them cool before removing them from the tin. Tip: This recipe can be adapted in many ways; for example, you can simply use chocolate instead of the apples for delicious banana chocolate muffins. If you like it a little sweeter, you can add another 100g of sugar.
