Ingredients for 1 servings:
- 250 g flour, type 1050
- 100 g walnuts, ground
- 1 tbsp soy flour
- 2 tbsp water
- 1 pinch of salt
- 60 g Stevia sugar, or 120 g regular sugar
- 200 g margarine, vegan
- 600 g apples
- 2 tbsp water
- 60 ml water, or white wine
- 1 tsp cinnamon
- 1 tbsp lemon juice
- 1 tbsp brown sugar
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 20 minutes
for a 22cm springform pan
Preheat the oven to 180°C. Knead all the dough ingredients together and press half of the dough into the base of a greased springform pan. Pre-bake the base for 10 minutes. Then set the oven to 200°C. Meanwhile, peel and dice two apples and simmer with the water, sugar, and cinnamon for about 10 minutes, then puree. Peel the remaining apples and cut them into wedges. Mix them with the applesauce and lemon juice. Place the apples on the cake base. Sprinkle the remaining dough over the crumbles. Sprinkle the brown sugar over the top. Bake the cake for 40 minutes; if it starts to get too dark before then, cover with aluminum foil. This goes very well with ice cream, whipped cream, and caramel sauce.
