Rice meat with chicken breast

Ingredients for 4 servings:

  • 200 ml rice
  • 400 ml water
  • 1 large onion(s)
  • 500 g chicken breast
  • 3 tbsp tomato paste
  • 3 tbsp paprika powder
  • 500 ml chicken broth
  • salt and pepper
  • Garlic
  • chives
  • Parmesan

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Rice preparation in the microwave

Cook the rice in a microwave-safe dish at 800W for about 10 minutes, then let it stand for 10 minutes. Peel and finely chop the onion and fry it in a pan. Dice the chicken breast and add it to the onions and fry everything. Add the bell pepper and tomato paste and fry briefly. Pour in the chicken broth, add the cooked rice, mix well and season with salt, pepper, garlic and chives. Bring to a boil until the liquid has evaporated. Sprinkle with Parmesan cheese before serving. This goes very well with a hunter’s salad or Chinese cabbage salad.
