Minced meat and rice pot with peppers

Ingredients for 2 servings:

  • 400 g minced meat, mixed
  • ½ onion(s), chopped
  • 1 clove(s) garlic, finely chopped
  • 1 tbsp tomato paste
  • 2 bell peppers
  • 400 g tomatoes, pureed
  • 300 ml vegetable stock
  • 125 g rice
  • salt and pepper
  • Paprika powder
  • Chili flakes or chili powder
  • oil
  • Parsley, chopped or other herbs

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Sauté the onion, garlic, and ground beef in a little oil. Peel and slice the bell pepper, then add it to the pot. Add the tomato paste and fry briefly. Deglaze with the passata and vegetable stock. Now add the rice and season to taste. You can refine the ground beef and rice pot with a little parsley or other garden herbs. Cover and simmer over medium heat for about 25 minutes, stirring occasionally. It’s ready to serve when the rice has absorbed almost all of the liquid and is cooked through. If you like, you can season the ground beef thoroughly beforehand. This will give the dish even more flavor.
