Microwaved bacon-wrapped meatloaf

Ingredients for 4 servings:

  • 500 g minced meat, mixed
  • 1 egg(s)
  • 1 onion(s), diced
  • salt and pepper
  • Paprika powder
  • coriander
  • marjoram
  • 1 tbsp parsley
  • 100 g raw bacon, cut into thin slices
  • 100 ml vegetable broth, hot
  • 250 ml vegetable stock
  • 200 g herb cream cheese
  • 1 stale roll

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Soak the bread roll in water and squeeze out any excess water. Then add it to the minced meat and mix with the egg, spices, and onion to create a nice meat dough. Shape the dough into a bread-like loaf, wrap the ham slices tightly around it, and then place it in a glass dish. Pour in 100ml of hot stock and cook with the lid on for 7 minutes at 900 watts. Then finish cooking uncovered using a combination of grill on the highest setting and microwave at 600 watts for 20 minutes. Then remove the meatloaf and keep warm, wrapped in aluminum foil. Pour the 250ml stock into the meat juices and bring to a boil again at 900 watts for about 3 minutes. Stir in the herb cream cheese and serve with the meatloaf. Serve with green beans and potatoes.
