Stuffed peppers

Ingredients for 2 servings:

  • 2 bell peppers
  • 1 tbsp water
  • 250 g minced meat, mixed
  • 1 tbsp breadcrumbs
  • 1 egg(s)
  • 1 onion(s), diced
  • 1 tsp tomato paste
  • e.g. salt and pepper
  • 250 ml broth

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 11 minutes; Total time approx. 26 minutes

Wash and deseed the peppers, and cut off one of the tops. Place them in a microwave oven, pour over the water, and pre-cook for one minute at 600 W. Make a meatball mixture from the ground beef, breadcrumbs, egg, diced onion, tomato paste, and spices. Fill the pre-cooked peppers with the mixture, pour over the broth, and cook for about 10 minutes at 600 W. Serve with rice or potatoes.
