- 200 g walnuts, ground
- 40 g panko
- 30 g Appenzeller cheese, finely grated
- Salt and pepper, white
- nutmeg

- 100 g powdered sugar

Mix the ground nuts with panko, salt, pepper, and nutmeg. Beat the egg whites until stiff, gradually adding the powdered sugar. Take 5 tablespoons of this egg white mixture and mix it with the curry powder in a small bowl. Mix the remaining egg white mixture well with the seasoned, ground nuts. Preheat the oven to 125°C (top/bottom heat). Place the wafers on a baking sheet lined with baking paper and generously spread the nut mixture on top with a small spoon. Spread with the curry meringue mixture and place a nut half on top of each one. Bake on the middle rack for 30 minutes; baking time may vary. The first bite has a subtle hint of curry, followed by a slight spiciness from the pepper. Makes 16 cookies. A single cookie has 145 calories.
