Beat the butter with the whisk of a hand mixer until fluffy. Add the egg yolk, crème fraîche, salt, and pepper, and mix. Add the flour and half of the freshly grated Gouda cheese, and knead everything into a smooth dough. Roll out the dough on a lightly floured surface into a rectangle about 3 millimeters thick. Use a pastry wheel to cut into 2 cm wide and 8 cm long strips. Place them close together on a buttered baking sheet. Brush the strips with beaten egg yolk and sprinkle with the remaining cheese. Bake in a hot oven at 220°C (top/bottom heat) for about 12 minutes.
