Rice salad with apples and cooked ham

Ingredients for 4 servings:

  • 200 g long grain rice
  • Salt
  • 400 g bell pepper(s), red
  • 2 apples
  • 200 g cooked ham
  • 150 g yogurt, 1.5% fat
  • 2 tbsp chives
  • 2 tsp sambal oelek

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Boil the rice with twice the amount of salted water and let it simmer over low heat for about 20 minutes. Drain the rice, rinse with cold water, and let it cool. Halve, deseed, and wash the peppers. Wash and core the apples. Dice the peppers, apples, and cooked ham. Place everything in a bowl and mix with the rice. Combine the yogurt with the chives and sambal oelek, season to taste, add to the rice mixture, and stir in.
