Penne with shrimps in spicy olive oil sauce

Ingredients for 2 servings:

  • 200g penne
  • 120 g shrimp
  • 40 ml olive oil
  • ½ tbsp paprika powder
  • 2 cloves garlic
  • Pepper, ground
  • 1 tbsp lemon juice
  • 2 tbsp, stalked parsley or other herbs
  • 1 tomato(s)

To prepare the penne, bring the water to a boil in a pot large enough for the penne. Only add the salt once the water is boiling! Meanwhile, dice the tomato and finely chop the two garlic cloves. Add the penne to the boiling water (since the pasta takes longer to cook than the sauce, it’s important to start with the sauce later). Once the pasta has been cooking in the pot for a few minutes, start with the sauce. Heat a pan on your stovetop for a short time over high heat and add the olive oil. Then reduce the heat to low. Now add the paprika, garlic, and ground pepper. Make sure the garlic cooks and doesn’t brown. Stir everything thoroughly every now and then. Add the shrimp and cook at a low heat. Don’t leave it in the pan for too long, as you want the shrimp to stay moist. After 4-5 minutes, add the parsley and lemon juice. The pasta should be done just before the shrimp. Drain the pasta and serve. Add a little oil from the pan and spread it out so the noodles don’t stick together. Finally, place the shrimp on top.
