Passion fruit yogurt cream

Ingredients for 4 servings:

  • 250 ml passion fruit juice
  • 400 g yogurt
  • 50 g sugar
  • 1 tbsp vanilla sugar
  • 250 g whipped cream
  • 1 tbsp, leveled cornstarch

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Blend the cornstarch with 2 tablespoons of passion fruit juice until smooth. Bring the remaining juice to a boil, stir in the mixed cornstarch, and simmer briefly while stirring. Cover the surface of the pudding with plastic wrap and chill for about 30 minutes. Mix together the yogurt, sugar, and vanilla sugar. Whip the cream until stiff and fold in. Stir in the cold pudding. Ladle into glasses and garnish with mint leaves, if desired.
