Fig and lemon jam

Ingredients for 3 servings:

  • 500 g fig(s), fresh
  • 500 g gelling sugar, 1:1
  • 1 packet of vanilla sugar
  • 1 lemon(s), organic
  • 2 tbsp thyme, dried
  • ½ tsp cinnamon powder

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

with thyme and a hint of vanilla and cinnamon

Finely dice the figs and half of the lemon, including the zest. Place them in a saucepan with the gelling sugar and bring to a simmer over low heat. Add the juice of the second lemon half, vanilla sugar, cinnamon, and thyme. Simmer, stirring constantly, and test for settling. If the mixture sets quickly on the plate, pour into jars immediately.
