Pork fillet studded with cheese in yogurt sauce

Ingredients for 4 servings:

  • 2 small pork fillets
  • ½ tsp salt
  • 1 tsp, leveled paprika powder
  • 100 g cheese (Swiss or old Dutch), in a piece
  • 1 tbsp, leveled flour
  • 4 tbsp butter
  • 1 onion(s) , or 2 tbsp onion flakes
  • 1 tsp broth, granulated
  • 1 cup yogurt (cream)
  • 2 tbsp parsley, chopped

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

Trim the fat and skin from the fillets, then rub with salt and paprika. Cut the cheese into thick, approximately 4 cm long sticks and insert them into the fillets like a hedgehog, making sure they are about three-quarters deep. Then coat the fillets in flour and fry in a pan with butter until light brown on all sides. The cheese sticks will melt on the outside. Add the onion, the granulated stock and the yogurt, and mix everything together. Put the lid on and simmer over low heat for 40 minutes. If you like, you can purée the sauce a little more and finally stir in the parsley. Serve with homemade spaetzle or knöpfle and peas or a green salad.
