Ingredients for 4 servings:
- 1 ½ kg minced beef, alternatively minced lamb
- 3 eggs
- 3 shallots
- 1 garlic clove(s), optional
- 6 tbsp, heaped breadcrumbs
- 3 tsp, heaped Dijon mustard
- 50 ml milk, approx.
- salt and pepper
- Oregano, optional
- Sumac, optional
- Chili, optional
- Rapeseed oil or peanut oil
Instructions
Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 1 hour 2 minutes
with minced beef or lamb
Peel and finely chop the shallots and garlic, and sauté in a little oil. Knead the ground beef, eggs, breadcrumbs, mustard, shallots, milk, garlic, and spices until a firm texture is achieved. Let stand for about 30 minutes, then season to taste and adjust the seasoning if necessary. Form the mixture into large, flat patties and fry in a little oil in a pan over high heat for 2 x 3 minutes on each side, until cooked through. Seasoning with sumac, oregano, chili, or garlic is optional. Sumac can be found in Turkish shops, for example. The amount of milk and breadcrumbs varies.
