Oatmeal muffins with strawberry yogurt

Ingredients for 12 servings:

  • 100 g sugar
  • 1 packet of vanilla sugar
  • 125 g butter
  • 1 pot of yogurt (strawberry yogurt) approx. 150g
  • 2 large eggs
  • 100 g flour (wholemeal flour)
  • 50 g wheat flour
  • 100 g oat flakes, fine
  • ½ pack of baking powder
  • possibly almond flakes
  • possibly icing

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

First, preheat the oven to 175 degrees Celsius (top/bottom heat). Mix together the butter, sugar, and vanilla sugar. Add the eggs one at a time and continue mixing for about 2 minutes until creamy. First, add the yogurt. Mix the oats, whole-wheat flour, and wheat flour with the baking powder and immediately add to the batter. Fill into 12 muffin cups and bake in the oven for about 20 minutes. The tops of the muffins should be lightly browned. Place the muffins on a wire rack, let them cool, and garnish with icing and flaked almonds, if desired.
